Banana walnut muffins


You will need 4 large ripe bananas..

...I use a potato masher to mash the bananas.

In a separate (med) bowl, add 3/4 cup of white sugar

...1/3 cup of melted butter, slightly cooled (if the butter is too hot, it will cook the egg that you will be adding next.

...add 1 egg to the sugar/butter mixture

...stir until fully combined

In a separate (smaller) bowl, combine 1 1/2 cups of all purpose flour, 1 tsp. baking soda, 1 tsp. baking powder and 1/2 tsp. salt.

Mix the mashed banana with the sugar/butter/egg mixture until combined...then fold the flour mixture into the banana mixture...I know, I have overused the word "mixture" but at the time, that's all I could come up with!

Scoop or spoon the batter into muffin tins lined with paper cups or grease the cups...whatever you want is fine with me...fill them to about 2/3 full

Chop walnuts...

...sprinkle the chopped walnuts on top of the batter

...then bake at 350 degrees for 20-25 minutes or until golden brown, remove from oven and cool on a wire rack.

I realize that this muffin has no business being on a plate beside a soft boiled egg where toast "soldiers" should be, but I thought that it just all came together in a "Downton Abbey-esque" way!

1 tsp. baking powder

1 tsp. baking soda

1/2 tsp. salt

1. Mash bananas and set aside. I

2. In a separate medium bowl, stir together sugar, melted butter and egg until fully combined.

3. Mix the mashed banana with the sugar/egg/butter mixture.

4. In a small separate bowl, sift together flour, baking powder, baking soda and salt. Stir the flour mixture into the banana mixture until all combined.

5. Spoon into muffin tins and bake at 350 degrees for 20-25 minutes or until golden brown...remove from oven and cool on a wire rack.
